Scott's Black Bean Salsa-Salad

Ingredients

these are just guidelines - use whatever you've got and adjust to your taste

  • 2 cans of black beans, drained

  • 2 cans of petite diced tomatos, drained

  • 1 small can of corn, drained

  • 2 cloves of garlic, minced

  • 1 med onion, diced

  • 1 green pepper, diced

  • 1 avocado, diced

  • 1 jalapeño or 1 chipotle, minced (or both if you like it hot)

  • 1 bunch chopped cilantro leaves

  • Cumin, Oregano, Salt & Pepper to taste

  • lime or lemon juice

  • olive oil

Directions

  1. Mix everything in a bowl

  2. Taste and adjust seasoning

  3. Let sit for 30 min before serving if possible
