Walter's Vegetable Beef Soup
Ingredients
1-2 lbs ground beef
1 onion, diced
1 clove of garlic, minced
tarragon (Italian seasoning for substitute)
2-3 carrots diced
1 box beef broth
1 large can of tomato puree or crushed tomatoes
pinch of sugar
squirt of ketchup
splash of vinegar
2 baking potatoes, cubed
limas
corn
salt and pepper
Directions
Sweat the onion, carrots, and tarragon in the bottom of the soup pot.
When the onions first start to turn translucent, add the seasoned hamburger to cook.
After the meat is done add the garlic for a minute
Add the broth, tomato, ketchup, sugar, and vinegar. Bring to a simmer
Add the potatoes and simmer until they are almost fork tender
Add the limas, corn, and any other vegetable you like
Allow it to simmer for another 15-20 minutes.
Taste for seasonings
