Andrea's Shortbread-Jam Thumbprints

Ingredients

Cookie

• 2/3 c Sugar
• 1 c Butter
• 1/2 tsp Almond Extract
• 2 c All Purpose Flour
• 1/2 c Jam (Raspberry Recommended)

Glaze

• 1 c Powdered Sugar
• 1 1/2 tsp Almond Extract
• 2-3 tsp Water
• 1 tsp Lemon Juice

Directions

1. Heat oven to 350 degrees.
2. In large mixer, combine Butter, Sugar, and Almond Extract. Beat until creamy, 2-3 min.
3. Reduce speed, add in Flour. Beat until well mixed.
4. Cover and chill for 1 hour.
5. Shape dough into 1 inch balls, place 1 inch apart on baking tray.
6. With thumb, make an indentation in each cookie. Add 1/4 tsp Jam to each indentation.
7. Bake 14-18 minutes, until edges are lightly browned.
8. Let stand for 1 minute. Remove from sheet.
9. Whisk together Powdered Sugar, Almond Extract, Water, and Lemon Juice to form the Glaze.
10. Drizzle cookies with the Glaze.
