Ingredients
Everything is to taste. Mix up everything except the mayo. I use 2 or 3 stalks of celery, 2 or 3 dinner table spoons of sweet cubes, and a handful of pecans.
Add enough mayo to bind everything together and moisten, but you want it a little on the tight side at this point. Season with salt and pepper. Let it chill in the refrigerator for at least a half an hour. When you take it out, it should have loosened up some, but you can add more mayo if you want it creamier.
I sometimes use onion salt instead of regular salt to cut the sweetness a bit, but that's not the way mom does it.
