Walter's Banana Pudding
Ingredients
- 3 eggs, seperated
- 1 C sugar
- 3 T flour
- dash of salt
- 2 C milk (preferably whole)
- splash of vanilla
- 5 bananas, cut and tossed in lemon juice and a pinch of sugar
- 1 box of Vanilla Wafer cookies
Directions
- Over medium-low heat, whisk together egg yolks, sugar, flour and salt until smooth
- Reduce heat to low and add milk
- Whisk constantly until custard thickens and coats the back of a spoon (8-10 minutes)
- Remove from heat and stir in vanilla
- Smear a small amount of custard over the bottom of a baking dish (8x13 or 3 qt or larger)
- Layer cookies, then bananas, and enough custard to barley cover. Repeat to use all of the bananas and custard.
- Beat egg whites with a little custard to form meringue. Spread meringue over pudding
- Bake in a 350 degree oven about 10-15 minutes or until meringue begins to brown
