Ingredients
- 1-2 lbs ground beef
- 1 onion, diced
- 2 cloves of garlic, crushed
- Pickled jalapeno slices, diced, plus 1T of the liquid from the jar - to taste
- Texas Pete
- Chili powder
- Paprika
- Cumin
- 1 big can of crushed tomatoes or tomato puree
- 1 box of beef broth
- Squirt of ketchup
- 1 T sugar
- Optional 1 small can of tomato paste (for thicker chili)
- 1 big (quart?) can of beans + 1 regular can of beans, drained (dad usually uses dark kidney, but will use black beans or light kidney)
Directions
- Cook ground beef and onion in the bottom of soup pot
- When most of the beef is cooked, add a handful of chili powder, about half as much paprika and cumin, garlic, diced jalapeno and liquid, and Texas Pete.
- Allow the meat mixture to cook together for about 5 minutes.
- Add the tomatoes, 1/2 - 3/4 of the broth, ketchup, and sugar. Simmer for about 15 minutes.
- Uses additional broth or tomato paste to achieve desired consistency and add beans.
- Taste for seasoning and simmer for another 20-30 minutes
