Roasted Brussel Sprouts and Zucchini with Bacon
1/2 lb. Brussels sprouts, halved
3 or 4 zucchini, cut into half-moon pieces
10-15 slices bacon, chopped into small pieces
Salt, pepper, olive oil
Brush baking sheet with olive oil and places cut veggies in one layer. Brush each piece with a little more olive oil. Salt and pepper, then roast at 350 degrees for 40-50 minutes, turning once, or until sprouts are golden brown/fork tender.
While veggies roast, cook chopped bacon pieces in a skillet over med-high heat and drain.Â
Toss bacon and veggies together in a large bowl and serve!
