Cajun Oven Fried Chicken

Serves 6

½ c. buttermilk
1 Tbl. Cajun seasoning**
1 c. Panko bread crumbs
1 ½ lbs. boneless, skinless chicken breasts – (6 – 4 oz. pieces)
cooking spray

Notes:
*You can make your own buttermilk by combining ½ c. of milk with ½ Tbl. of lemon juice or vinegar and let stand 5 minutes.
** You can add any seasonings you like to your breading – ranch seasoning, equal parts salt and pepper, garlic, etc…


1.)    Preheat oven to 350 degrees and spray a baking sheet with the cooking spray.

2.)    Place buttermilk in a shallow bowl.

3.)    Combine Panko bread crumbs and seasonings together in another shallow bowl.

4.)    Dip chicken in buttermilk and then dredge in bread crumbs, make sure the chicken is thoroughly coated. Place on baking sheet.

5.)    Once all of the chicken is on the baking sheet, lightly spray the chicken with cooking spray.

6.)    Bake at 350 for 30 minutes, turning chicken at 15 minutes.
