Grilled Mozzarella, Tomato and Pesto Sandwiches

8 slices of  pre-sliced Italian bread

2 Tbl Butter

4 tsp Pesto (yes, I use store bought)

8 slices Mozzarella, fresh

2 to 3 Tomatoes, vine ripe are the best

1) Preheat oven to 300 degrees

2) Spread butter over both sides of the bread and grill both sides of the bread on a flat top.

3) Place grilled bread on a baking sheet or baking stone, put about 1 teaspoon of pesto on half of the bread slices, and place the sliced mozzarella on the remaining half of the bread slices. Bake for about 10 minutes.

4) While the sandwich is baking in the oven, slice the tomato into thin slices.

5.) Remove sandwiches from oven. Top the pesto halves with the tomatoes and place the remaining half of the sandwich on it. Bon Apetit'.

Note: The reason for baking the sandwich is to melt the cheese without burning the bread. However, you must individually grill the bread slices for crispiness.
