Potato Cakes

yield 8 potato cakes

2 c. leftover cold mashed potatoes
1/4 c. flour
2 eggs
2 Tbl. butter or oil

1.) Mix cold mashed potatoes, flour and egg together until thoroughly combined. (If your mashed potatoes are well seasoned you will not need to add extra seasonings, however, if they are not well seasoned add in salt and pepper to taste.)

2.) Heat skillet over medium heat and melt butter.

3.) Drop spoonfuls of potato mixture into hot butter, and slightly flatten with the back of an oiled spatula.

4.) Fry for 5 to 10 minutes per side. Do not try to flip the cakes too early. Once you see browning around the edges then you can turn them.
