stuff about oat milks to come....
My survey started in 2020 of plant-based milk substitutes available in Europe (so far Germany and France) for coffee drinks. Oat milk has a more neutral flavor and creamier mouth feel than any of the other substitutes like almond milk (often bitter, not as creamy), soy milk (stronger/less neutral flavor), or rice milk, and hence dominates this survey.
As the brands I have tried do not seem to change depending on the EU country (unlike Nutella it appears), this page is not associated to a country!
taste: clean, neutral taste with a slight sweetness and not too starchy
aftertaste: clean
mouth feel: clean after mouth feel (no tongue coating)
stretchability: microfoam stretchability with my limited stretching technique on my "diva" La Pavoni Professional v.2.0 (early 1980s) lever espresso machine
Okay, admittedly this is not my best pour. Its
taste: cleanest of all the ones tried (no wonder with its minimal ingredient list compared to Oatly milks, with a hint of sweetness and no taste of starches or stabilizers
aftertaste: clean, no lingering after taste
mouth feel: very clean, no starchy coating
stretchability: pretty good despite it being one of the least viscous of milks, but because it was the runniest, it was also easier to tap out any big bubbles which are quite easy to introduce during steaming.
Given that it scored so high on the other criteria, and the rather consistent stretchability with enough stable microfoam to maintain a creamy mouthfeel even after the textured milk has been sitting for awhile (albeit maybe slightly noticeably different to "barista" editions) this one came out as my favorite.
Not stocked in many places (found in DM). Rather forgettable, but certainly not the worst.

Oat milk from the big French chain supermarket Carrefour.
taste: very clean and pleasant, slightly sweet
aftertaste: pretty clean though slight aftertaste of something reminiscent of additives (but not too chemically); at least not too lingering
mouth feel: very light and clean, no starchy coating; creamy
stretchability: feels impossible to stretch -- steam creates turbulence than a whirlpool resulting in huge bubbles that quickly pop.
Also not my best pour (recurrent theme). This oat milk from the national drugstore chain (equivalent to Thrifty's or RiteAid but with a line of its own organic food products) is not bad in coffee drinks.

stretchability: a bit harder to get the knack of stretching this and quite easy to get big bubbles that tap out into a flat body-less mess (i.e. not very stable)
This might be a runner-up for a good balance of stretchability and minimal ingredient list (which contributes to the cleaner taste compared to "barista" lines of other brands).

aftertaste: slight after taste probably because of the soy milk?
mouth feel: slight astringency, prob because of the soy milk content
stretchability: certainly much easier to stretch than dm's non-barista "oat drink"
Although must professional baristas seem to prefer this Oatly, I find it
taste: starchy and reminds me of the awful soy milks in tetrapaks -- I would not like to drink this straight

stretchability: very thick and stretchable with stable bubbles, but still easy to introduce too much air (and then very difficult to tap out)
taste: a little less starchy than the Barista edition, but still is and still would not like to drink this straight

Hazelnut milk might just be the next best plant-based milk for coffee, and better than almond milk because it seems to have a less dominant bitterness? To be continued....
