Alpha-Gal limits variety, but it doesn’t eliminate it. You just have to be willing to experiment. Thankfully, I am—and my husband is right there with me, even learning to cook some dishes so I can take a break.

I may not be able to work in the traditional sense, but I can still build something meaningful. With my background in graphic design and a lifetime of cooking, I’m creating cookbooks that speak to people like me.
I try not to just focus on Alpha-Gal, as I mentioned in a previous post, my husband is type 1 diabetic, has been since he was 7 years old (back when they got it all wrong on what caused it). His diet is pretty specific. I have to cook with fewer carbs. And wouldn't you know, EVERYTHING you eat, including vegetables, has carbs. So creating recipes that use low glycemic levels is a MUST. Sugar is not the only thing diabetics can't have, or should have at minimal doses.
You will find that my recipes usually have suggestions for replacements to take the guesswork out of how to swap one thing for another. I typically strictly work with Coconut sugar, monk fruit sugar as sweeteners. I use cashew butter (home-made) and coconut milk and cream (to replace dairy) in most all my recipes.
This isn’t just about recipes—it’s about reclaiming creativity, sharing hard-earned wisdom, and proving that limitations don’t have to mean the end of possibility.
