Rustic Ruby Pesto

Ingredients:
½ cup sun-dried tomatoes (oil-packed, drained)
¼ cup toasted walnuts or pumpkin seeds
1 small garlic clove
¼ cup fresh basil
2 tbsp nutritional yeast
¼ cup olive oil
1 tbsp lemon juice
Salt to taste
Instructions:
Blend all ingredients in a food processor until chunky-smooth.
Add more oil or lemon juice to reach the desired consistency.
Store in a sealed jar in the fridge for up to 1 week.
