Hearty Lentil & Sweet Potato Bake
Ingredients:
1 tbsp olive oil
1/2 cup chopped onion
1 clove garlic, minced
1/2 cup diced carrots
1/2 cup diced celery
1/2 tsp dried thyme
1/2 tsp smoked paprika
1 cup cooked green or brown lentils
1 tbsp tomato paste
1/2 cup vegetable broth
Salt and pepper to taste
2 medium sweet potatoes, boiled and mashed
Instructions:
Preheat oven to 375°F.
In a skillet, sauté onion, garlic, carrots, and celery in olive oil until soft. Add thyme and paprika.
Stir in lentils, tomato paste, broth, salt, and pepper. Simmer until thickened.
Spread the lentil mixture in a baking dish. Top with mashed sweet potatoes.
Bake for 20–25 minutes until golden and heated through.
Kick It Up a Notch:
Add caramelized onions or fresh rosemary
Drizzle with dairy-free gravy
