Notes: Tilapia is a mild, flaky fish that takes beautifully to bright, fresh flavors. This dish is incredibly simple and quick!
2 tilapia fillets (about 6 oz each)
2 tbsp Classic Lemon Herb Vinaigrette (Recipe #1)
Fresh lemon slices and fresh parsley for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Line a small baking dish with parchment paper.
Place tilapia fillets in the prepared baking dish. Drizzle each fillet with 1 tablespoon of the Classic Lemon Herb Vinaigrette.
Bake for 12-15 minutes, or until the fish is opaque throughout and flakes easily with a fork (internal temperature 145°F/63°C). Cooking time will vary with thickness.
Garnish with fresh lemon slices and chopped parsley before serving.
Pairing: A crisp Pinot Grigio (around $8-$12) or a lemon-infused water. Side Dish 1 (Vegetable): Steamed Broccoli Florets
Ingredients: 2 cups broccoli florets; a pinch of salt.
Preparation: Steam broccoli florets over boiling water for 5-7 minutes, until tender-crisp. Season with a pinch of salt.
Side Dish 2: Wild Rice Pilaf
Ingredients:
1/2 cup wild rice blend
1.5 cups vegetable broth
1 tbsp chopped fresh chives (optional).
Preparation: Rinse wild rice. In a small saucepan, combine wild rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until all liquid is absorbed. Fluff with a fork and stir in chives (if using).
