Alpha-gal safe ketchup
Makes about 1 1/2 cups.
Ingredients
1 (6-ounce) can of organic tomato paste
1/2 cup water
1/2 cup organic apple cider vinegar
1/4 cup maple syrup (or other alpha-gal safe sweetener)
3/4 teaspoon salt
1/4 teaspoon organic onion powder
1/8 teaspoon organic garlic powder
1/4 teaspoon ground mustard (make sure it does not contain carrageenan)
Instructions
In a medium saucepan, mix together the tomato paste, water, maple syrup, and vinegar. Whisk until fully combined.
Add the salt, onion powder, garlic powder, and ground mustard to the mixture and stir to blend.
Place the saucepan over medium heat and bring the mixture to a light simmer.
Lower the heat and let it simmer for about 10 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
Remove the saucepan from the heat and allow the ketchup to cool to room temperature.
Transfer the cooled ketchup into a clean glass jar with a tight-fitting lid. Refrigerate for at least one hour to allow the flavors to meld.
Important considerations for Alpha-gal safety
Sweeteners: Look for vegan-certified sugar or use alternatives like maple syrup, agave nectar, or honey, if tolerated. Note that some people with AGS do not tolerate all honey.
Thickeners: Avoid carrageenan, a seaweed-derived ingredient that contains the alpha-gal sugar and can be a significant trigger for some people.
Dairy: For those sensitive to dairy, check for milk-derived ingredients like whey and casein, which are sometimes used in sauces and processed foods.
Natural Flavors: Ketchup ingredients often list "natural flavors," which can be derived from mammalian sources. Making your own ketchup is the safest way to avoid this hidden ingredient.
