Creamy, dreamy, and full of greens. This casserole blends cooked rice, spinach, and coconut milk into a comforting bake that glows with gentle flavor and warmth.
Ingredients:
1 tbsp olive oil
1/2 cup chopped onion
2 cloves garlic, minced
4 cups fresh spinach
2 cups cooked rice
1 cup coconut milk
1/2 tsp dried basil
Salt and pepper to taste
Instructions:
Preheat oven to 375°F.
In a skillet, sauté onion and garlic in olive oil until fragrant. Add spinach and cook until wilted.
Stir in rice, coconut milk, basil, salt, and pepper.
Transfer the mixture to a baking dish and smooth the top.
Bake for 20–25 minutes until bubbly and lightly golden.
