Savory Mushrooms with Mashed Cauliflower
Ingredients:
1 tbsp olive oil
1/2 cup chopped onion
2 cloves garlic, minced
2 cups sliced mushrooms
1 tbsp flour (chickpea or rice flour)
1 cup vegetable broth
1/2 tsp dried thyme
Salt and pepper to taste
1 head cauliflower, chopped
2 tbsp olive oil (for mash)
Instructions:
Steam cauliflower until tender, then mash with olive oil, salt, and pepper.
In a skillet, sauté onion and garlic in olive oil. Add mushrooms and cook until browned.
Sprinkle flour over mushrooms and stir. Pour in broth, add thyme, and simmer until thickened.
