Ingredients
1/3 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
2 eggs preferably at room temperature
1 cup packed mashed ripe bananas (about 3 bananas)
1/4 cup milk
1 tsp baking soda
1/2 tsp salt CB
1/2 tsp cinnamon
1.75 cups flour
1/3 cup quick oats
Instructions
Preheat the oven to 325 degrees and greas your muffin tin with butter or non-stick cooking spray
In a large bowl, beat the olive oil and honey together with a whisk. Add the eggs and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, salt and cinnamon
Add the flour and oats to the bowl and mix with a large spoon until combined
Divide the batter evenly between the muffin cups, about 2/3 full and sprinkle 1 tbsp oats on the top and about 1 tsp of sugar in total
Bake muffins for 22-25 mins or until a toothpick comes out clean
