1 16 oz can - chickpeas
1 cup (1/2 for rolling, 1/2 for mixture) - vegan bread crumbs
Alt: 1/2 cup -almond meal
2/3 cup (1/3 for rolling, 1/3 in mixture) - vegan parmesan cheese
Alt: 2/3 cup - nutritional yeast
1/2 cup - white onion, minced
3 cloves - garlic, minced
2 tsp - Italian seasonings
Alt: 1/2 tsp each - dried basil and oregano)
optional: 1/4 cup - fresh parsley
2 Tbsp your favorite marinara or tomato sauce
Olive oil for sautéing + salt and pepper to taste
Preheat oven to 375
Sauté garlic, onion
Add chickpeas in food processor and blend. Add garlic and onion and remaining ingredients to processor and blend
Scoop out 1 Tbps. amounts of mixture and roll into balls. Roll balls over breadcrumbs and vegan cheese
Optional : Freeze balls for later use
Brown balls in pan with oil
Bake balls after browning for 15 mins
