1 Cauliflower
1/3 - onion
1 clove garlic
1 tsp - cumin
1 tbsp - olive oil
2 cups vegetable broth (may add more for consistency)
1/2 lemon
Salt and pepper to taste
Optional - Dill
Equipment Needed:
Powerful blender (like a vitamix) or a hand blender
Pre heat oven to 400 F
Slice cauliflower into ~1/2 inch slices.
Coat cauliflower in oil and put a pinch of salt and black pepper
Roast cauliflower until blackening (roughly 30 mins)
Saute diced onions and garlic with cumin until it browns
Blend cauliflower with garlic, onion and water. Make sure you blend it very smooth (It will be very gritty if not blended well enough).
Alternatively you can place garlic and remaining ingredients in a pot and run a hand blender until very smooth
Add water to thin if you would like and add salt and pepper to taste
Squeeze a half lemon on top
Add dill on top
