Smashed Chickpea Sandwich
Inspired by simple-veganista recipe.
Easy - 20 mins | 2 servings
For mash:
1 can (~16 oz) - chickpeas
1/3 cup - tahini
1 avocado
1 lemon
1 tsp - yellow mustard
1 tsp garlic powder
1/2 tsp - salt
1/2 tsp - black pepper
Sliced Sourdough bread
Alt: Whatever bread you want to use
Veggies - tomatoes, arugula, kale, onion
Equipment Needed:
Blender
Mortar and Pestle or Potato Masher or a Fork
Drain chickpeas and heat them a little bit in a pan (~5 mins)
Blend to break them up
Squeeze lemon juice into the chickpeas
Combine all mash ingredients (except the bread) into a bowl and mash
Add additional salt and black pepper to taste
Warm the bread
Make sandwich with bread and veggies of choice
