Easy - 20 mins | 3 servings
1 cup - flour
1 tsp - baking powder
1/4 tsp - of salt
1.25 cup - oat milk (or similar non-dairy milk)
2 Tbsp - olive oil
1 tsp - vanilla
Optional add-ins:
1/4 to 1/2 cup - chocolate chips
1/3 cup - frozen blueberries or other berries, thawed for at least a few minutes ideally
Serve with:
maple syrup
powdered sugar
sliced strawberries
peanut butter
Equipment Needed:
Nonstick frying pan or a seasoned cast iron pan
Mix all dry ingredients in a medium bowl
In a separate smaller bowl, whisk together the wet ingredients
Pro Tip: a 2-cup liquid measuring cup works well for this
Create an indentation in dry ingredients and pour in wet ingredients while mixing with whisk
Mixing in the dry ingredients from the edges of the bowl a little at a time will help avoid big clumps
If it seems too thick, you can add a bit more oat milk
Heat a frying pan on medium-high until very warm
If adding chocolate chips or fruit, stir into the mix now (or add later on top as you make each pancake)
Add a bit of oil to the pan to avoid sticking
Pour 1/3 cup of the mixture into the pan and spin pan slowly to allow the mixture to expand out
Heat until bubbles stop appearing (about 2 minutes, depending on heat level) and flip all at once
Heat that for another 2-ish minutes or until golden brown
Serving suggestions:
Pour on some pure maple syrup, sliced strawberries and powdered sugar
You can also add a spoonful of peanut butter to make the meal more filling
