Medium Effort - 40 mins
6 cup - vegetable broth
2, 16 oz cans - black beans
2 - Roma Tomatoes
2 - Tomatillos
½ - Onion
Alt: 1 bunch - green onions
2 - garlic cloves
1 bunch - Spinach/Kale
1 Tbsp - Coconut oil
1 tsp - Chipotle Adobe sauce
1 Tbsp - Lemon Juice
Spices: Garlic, Chile, Paprika, Salt, Black Pepper
(Optional) Jalapenos
½ Bell pepper (optional)
Process tomatoes, garlic, onion, jalapeno in food processor.
Heat oil on medium heat and place processed ingredients in pan. Heat until liquid is evaporated
Stir in broth, black beans, salt and bring to a simmer.
Put heat on low and cook for 20 mins
Add Bell pepper and spinach/Kale and cook for 10 mins
Add lemon juice, taste and add salt/spices as needed
Serve with some tortilla chips.
