Vegan Wacky Cake
This is an old chocolate cake recipe from my friend's grandmother that happens to be vegan! It uses a fun combination of baking soda and vinegar to make it rise (bring back any memories from school science projects and volcanoes?!)
This is an old chocolate cake recipe from my friend's grandmother that happens to be vegan! It uses a fun combination of baking soda and vinegar to make it rise (bring back any memories from school science projects and volcanoes?!)
For the cake:
3 cups - all purpose flour
2 cups - sugar
6 Tbsp - cocoa powder
1 tsp - salt
2 Tbsp - white vinegar
10 Tbsp - neutral vegetable oil
2 tsp - baking soda
2 cups - water
For the frosting:
TBD - confectioners sugar
TBD - coconut oil
TBD - non-dairy milk (almond, coconut, oat, etc.)
Equipment needed:
Mixing bowl
Wire whisk
Spoon or spatula
9" x 13" cake pan or similar
Combine the flour, sugar, cocoa powder, and salt with a wire whisk.
Form a small 'bowl' in the dry ingredients, then add in the vinegar and vegetable oil. Mix with a spoon or spatula until just combined. It may be a little lumpy - that is OK : )
Sprinkle the baking soda over the mixture, then stir slightly with a spoon or spatula to just combine.
Add 2 cups of water a little bit at a time, mixing with a spoon or spatula. Try to get most of the lumps out at this stage, but be careful not to over mix or you may activate the baking soda and vinegar reaction too much. The consistency should be fairly smooth but not too liquidy.
Grease the 9" x 13" pan (or line with compostable parchment paper), then pour the mixture in.
Bake at 350F for 30-45 min. When you think it is done, test with a toothpick or knife - it should come out smooth with no cake bits.
Meanwhile, make the frosting! Mix together the coconut oil and milk, then slowly add in the powdered sugar.
