Eggplant
Olive Oil
Salt
Italian Seasoning (Basil, Oregano, Thyme)
Preheat Oven to 350 F
Cut Eggplant into thin discs (1/4 inch)
Salt Eggplant slices thoroughly
Generously cover slices with olive oil
Sprinkle Seasoning
Bake Eggplant for 15 mins flip and bake on the other side for another 15 mins
