High Effort- 40 mins
2 16 oz cans - black beans
6 - tortillas
Optional: 1/2 - sweet potatoes
Optional: 1/2 bag (~15) brussel sprouts
1 bunch - kale/spinach
2 - tomatoes
2 - avocados
Optional: 1 - onion
tsp total - garlic, paprika, chili powder
lemon juice
Alt: Orange juice from fresh oranges
1/2 Tbsp - coconut oil
Alt: Use any other type of cooking oil (canola, peanut..)
Preheat oven at 400F
Cut sweet potatoes in small cubes
Thoroughly wash and halve brussel sprouts
Heat sweet potatoes and brussel sprouts in oven at 400F for 30 mins
Pro Tip: Flip after 15 mins. You can also remove the burnt skin pieces
Pro Tip: Not having sweet potatoes or brussel sprouts can reduce effort to make tacos and they are still good!
Drain beans
Cut onions and warm in pan with seasonings
Place beans in pan after onions are brown or when oil is hot
Warm for 10 mins and add kale
Warm for another 5 mins until kale shrinks
Heat a separate large pan dry
One by one heat tortillas in pan and flip when rising
Cut avocado and tomatoes
Serve tacos with warm tortilla, beans, sweet potates/sprouts, tomatoes and avocados . Squeeze lemon juice over top
Pro tip: squeezing oranges is a great replacement or addition to the lemon juice
