Quinoa salad with pomegranate

Ingredients:

  • 3 cups cooked quinoa (about 1 1/4 cup uncooked)
  • 1 cup pomegranate seeds (about 1 large pomegranate)
  • 1 large bunch parsley, chopped
  • 2 cups shredded cabbage and carrots
  • 1/2 cup lightly roasted walnut pieces for garnish

For dressing:

  • 1/3 cup extra-virgin olive oil
  • 1/3 cup freshly squeezed orange juice (1 medium orange)
  • 1 tsp freshly ground black pepper
  • 1/2 tsp salt

Method:

  • Toss all the salad ingredients except walnuts together
  • To make dressing, place all the ingredients in a bottle, close the lid and shake until emulsified
  • Drizzle dressing over salad and toss lightly
  • Before serving, garnish with walnuts and serve
