Quinoa salad with pomegranate
Ingredients:
- 3 cups cooked quinoa (about 1 1/4 cup uncooked)
- 1 cup pomegranate seeds (about 1 large pomegranate)
- 1 large bunch parsley, chopped
- 2 cups shredded cabbage and carrots
- 1/2 cup lightly roasted walnut pieces for garnish
For dressing:
- 1/3 cup extra-virgin olive oil
- 1/3 cup freshly squeezed orange juice (1 medium orange)
- 1 tsp freshly ground black pepper
- 1/2 tsp salt
Method:
- Toss all the salad ingredients except walnuts together
- To make dressing, place all the ingredients in a bottle, close the lid and shake until emulsified
- Drizzle dressing over salad and toss lightly
- Before serving, garnish with walnuts and serve
