ABOUT 2 HOURS BEFORE SERVING:
On waxed paper, coat squirrel pieces with about 1/4 cup flour. In 10-inch skillet over medium heat, in hot butter or margarine, cook pieces until browned on all sides. Add chicken broth and pepper; heat to boiling. Reduce heat to low; cover and simmer 45 minutes or until fork-tender. Remove pieces to warm platter.
In cup, blend 2 tablespoons flour and 1/2 cup water until smooth; gradually stir into pan juices in skillet and cook over medium heat, stirring constantly, until thickened; pour over squirrel.
RABBIT FRICASSEE:
Prepare as above, but use one 2-pound ready-to cook wild rabbit. Cook 1.5 hours. Makes 4 servings.
