ABOUT 2.5 HOURS BEFORE SERVING:
Preheat oven to 325°F. Sprinkle cavities of ducks with salt, pepper and rosemary; place apple and onion in each cavity, cutting them, if necessary, to fit. Place ducks, breast side up, on rack in open roasting pan. Roast 1.5 to 2 hours until ducks are tender when pierced with two-tined fork between leg and body; juices that escape should not be pink. Remove apples and onions; discard.
