ABOUT 45 MINUTES BEFORE SERVING:
Preheat oven to 350°F. In Dutch oven over medium heat, in hot butter or margarine, cook quail until browned on all sides; remove quail to platter. To drippings in Dutch oven, add onion and mushrooms; cook, stirring occasionally, until onion is tender, about 5 minutes. Stir in chicken broth and salt. Add quail to mixture; cover; bake 20 minutes or until quail is tender.
Place quail on toast points on warm platter. In cup, blend flour and sauterne (or 3 tablespoons water) until smooth; gradually stir into liquid in Dutch oven and cook over medium heat, stirring constantly, until mixture is thickened. Serve sauce with quail.
