Umettet fett har dobbeltbindig(er) mellom karboner.

Jeg tror at umettet fett kan avgi en karbonbinding lettere enn mettet fett, og inngår dermed smidigere i metabolsk omsetning…‽

I fettsyrer i cis-konfigurasjon har de dobbeltbundne karbonene hydrogener på samme side, mens hydrogenene i trans-konfigurasjonen sitter på motsatt side.

Videre tror jeg at cis-fett har bøyde molekyler som er mer fleksible enn trans-fettets rette molekyler som stabler seg tett sammen…‽
