These noodles are easy to make - you just have to get them going a couple of hours ahead of time. Children love helping out with handling this dough and then cutting the strips. Yield: about 4 cups cooked noodles.
Combine in medium mixing bowl:
1 egg
1 Tablespoon water
1/2 teaspoon salt
1 teaspoon oil
Add: 2/3 cup flour
Stir together, then roll into a ball with hands, adding a little flour if too sticky. Knead for 10 minutes.
Let stand, covered, for 1 hour.
Roll out dough on a floured surface, stretching with each rolling. Sprinkle flour if necessary to keep from sticking to pin.
Roll until paper thin and transclucent.
Let dry for at least 30 minutes
Cut into 1/8" to 1/4" strips with pizza cutter, for soup, or 2 inch strips for lasagna
Cook in rapidly boiling salted water for 10 minutes. Drain and add to soup before serving.
