I have become a huge fan of coconut oil for its outstanding and versatile health benefits, plus the outstanding way it bakes up and it's delicious flavor in select recipes. Coconut oil can replace other oils or butter in your recipes, including any of mine posted on this site. .
1 cup coconut oil, softened in microwave, (not liquified)
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup white flour ( or can use 2 cups white flour)
1 cup wheat flour, freshly ground ( I keep a supply of wheat flour fresh in the freezer)
1 teaspoon soda
1 teaspoon salt
2 cups rolled or quick cooking oats
1 cup chocolate chips
1 cup shredded coconut, unsweetened
Cream coconut oil and sugars; beat in eggs and vanilla until smooth. Add flour, soda and salt and blend well. Stir in oatmeal, chocolate chips and coconut if desired. If the dough seems a tad dry, add a few drops of water or a couple more Tablespoons of coconut oil while beating.
Bake for 10-12 minutes in preheated oven of 350.
