When it's time to ship the August steers and I am putting on a spread for the help, this is Doug's requested dessert. It has a delicious light and crispy crust. Let them pour on the cream for a dripping success.
10 ripe peaches, peeled and sliced
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon lemon juice
2 teaspoons cornstarch
Stir together and place in 9x13 glass casserole.
Topping:
2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1 stick butter
1/2 cup warm milk
Cinnamon and sugar
Mix dry ingredients; cut butter in with pastry blender. Stir in warm milk with fork til just moist. Drop by spoonfuls atop peaches and even out a little. Sprinkle lightly with cinnamon/sugar mixture on top, if desired.
Bake at 350 degrees, 40-45 minutes until just lightly browned.
