This has been a family fall favorite for a long time. It's just so easy to throw together for a quick dessert.
Doubled, I usually make it in my deep electric frying pan. Also works well on a stove top.
Yield: 6 servings
In a 3 quart (wider is best) saucepan combine:
3 cups sliced and pitted plums
1/2 cup sugar
3/4 cup water
Stir and bring to boiling; reduce heat to simmer.
In a large mixing bowl stir together:
3/4 cup flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
Cut in:
3 Tablespoons butter, to resemble coarse crumbs
Add:
1/3 cup milk, stirring just to moisten.
Spoon dough in 6 mounds atop simmering filling. Cover and simmer about 15-20 minutes or until a toothpick inserted into dumplings comes out clean. Serve warm with ice cream or cream.
