Oh, I love this moist recipe, changing it up with greek yogurt and coconut oil!
3 large ripe bananas, mashed (or 4 small)
2 eggs
1 1/4 cups sugar
2/3 cup melted coconut oil
1/2 cup plain greek yogurt
1 teaspoon vanilla
2 cups flour (one cup can be whole wheat flour if desired)
1, 1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cups chopped nuts, if desired
Place parch ment paper in bottom of two 7.5X 3.5 inch loaf pans. Preheat oven to 325. Mix mashed bananas, eggs, sugar, coconut oil, yogurt and vanilla until smooth. Combine flour, baking soda and salt and add to banana mixture. Stir until combined. Pour into greased pans. Bake one hour. Let cool 10 minutes before inverting pans. Cool on wire rack. For muffins, bake 20-25 minutes.
