When you're in a hurry but want something special, this breakfast is the ticket. Eat with hot syrup, strawberries, raspberries, fresh peaches, apple pie filling, and whipped cream!
Preheat oven to 425 degrees
Place 1/2 stick butter in 9x13 pan; put in oven to melt butter
Place in blender in order:
1 cup milk
6 eggs
1 cup flour
1/2 teaspoon salt
2 Tablespoons sugar
Blend until thoroughly combined. Remove pan with melted butter and spread around evenly. Pour batter gently on top of butter. Sprinkle lightly with cinnamon and sugar. Place immediately in hot oven.
Bake 20 minutes or until lightly browned.
Batter should puff up around the sides like a popover.
* I have had times when the batter didn't puff up as well; I attribute this to eggs that are not as fresh. It's still delicious, just not as light and fluffy.
