Roasted Red Potatoes & Crimini Mushrooms

4 large red potatoes, chopped

8 crimini mushrooms, chopped

1 small yellow onion, chopped

olive oil

kosher salt

black pepper

capers

Preheat the oven to 425*F. Place the chopped vegetables on a baking sheet and drizzle with olive oil, salt, and pepper. Bake for 20 - 25 min. Remove from the oven and plate, then top with capers.
