Bulgur Mint Salad

1 cup uncooked bulgur

1 cup boiling water

3 tbsp fresh lemon juice

2 tbsp olive oil

2 garlic cloves, minced

1 large tomato, cubed

1 medium cucumber, cubed

1/2 cup fresh parsley, roughly chopped

3 green onions, chopped

2 tbsp chocolate mint, roughly chopped

3/4 tsp salt

1/2 tsp black pepper

Combine bulgur and water in a large bowl. Cover with plastic wrap and let stand for 30 min. Fluff the bulgur and mix in the juice, oil, and garlic. Then combine with all ingredients.
