Spinach Chowder

2 cups chopped spinach
1 cup water
2 medium sized potatoes
3 slices bacon
1/2 cup sliced onion
3 tablespoons all-purpose flour
1 cup half and half
2 teaspoons salt

Add spinach to 1 cup boiling water.  Cover, lower heat, simmer 3 to 5 minutes.
Drain, reserving water.

Cook potatoes in salted water to cover until tender.
Drain, reserving water. 

Fry bacon in dutch oven until brown, remove bacon and place on paper towel to drain.
Crumble bacon and set aside for garnish.

Add onions to dutch oven and cook until tender.
Add flour and combine with onions, slowly add half and half, spinach and potato waters.
Cook, stirring constantly until comes to a boil and thickens.
Add salt, spinach and potatoes, bring to a boil and simmer for 5 minutes.

Fill serving bowls and garnish with bacon.

Yield 3 to 4 servings.
