Momma's Quick Beets

For 4 cups of cooked beets (You may use canned beets)

1 cup apple cider vinegar

1 cup sugar

Mix together in saucepan and heat until boiling.

Boil for 2 minutes

Pour syrup over beets. Cool to room temperature.

Store in fridge. These will keep for several days.

Momma would always use the beet vinegar for a

second cooking of beets. She poured the vinegar

over the beets, returned to the fridge to chill.
