Sourdough Starter using Yeast

1/2 teaspoon sugar

2 1/4 teaspoons dry yeast or 1 package

2 1/2 cups warm water (105-115 degrees)

1 cup instant nonfat dry milk powder

2 tablespoons sugar

4 cups all-purpose flour

In a bowl, about 3 quart size, mix first 3 ingredients. When yeast begins to bubble and rise stir in the next 3 ingredients. After mixing well cover loosely with plastic wrap and

place the bowl on a large sheet tray, this mixture could bubble over, this will prevent a lot of clean up. It will work quite a lot on the first day and needs to be stirred down to keep from falling out of the bowl. I try to make this when I am going to be home for about 12 hours so I can keep a close eye on the starter. This needs to sit in a warm place for 3 to 4 days. After 3 to 4 days it is ready to use or store in refrigerator. If you store place in a container with a loose fitting lid. If you store your starter in the refrigerator when you are going to make bread, remove from refrigerator and allow the starter to warm you will see bubbles appear in the starter.

To keep your starter going you need to feed with:

1 cup all-purpose flour

1 cup milk

1/4 cup sugar

Mix these 3 ingredients into your starter and allow it to bubble before storing in refrigerator.
