Kefir Milk Biscuits

Heat oven to 450 degrees F. Bake 10-12 minutes

Sift together 2 cups all-purpose flour

3 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

Cut in 1/4 cup shortening

Stir in 3/4 cup kefir milk

(this may vary with the thickness of the kefir)

I bowl mix with my hand incorporating all of the dry ingredients. After well mixed Round up on a Floured work space. Knead about 30 seconds. Roll out with a Floured rolling pin to 1/2 -3/4 inch thick. Cut to desired size. Gently work the scraps together and cut more biscuits. Place on baking sheet. If you have time you may let the biscuits rise for a few minutes. Put in hot oven and I check @ 10 minutes. We like our biscuits lightly browned.

I bake all of my biscuits on cast iron. I use a griddle or frying pan.

If seasoned correctly there is no need to grease the pan.

I preheat the pan in the oven while it is preheating, the biscuits start to rise quickly.

To reheat heat. Cut in half. In a frying pan put butter or olive oil and grill on cut side for a few minutes. I do this over medium heat.
