Beet Jelly

3 cups of beet water

4 teaspoons lemon juice

1 box of powdered pectin or 1/3 rounded cup of bulk pectin

Pre measure 4 cups sugar and set aside

1 small package of unsweetened soft drink mix aka Kool-Aid your choice of strawberry, grape or cherry

Combine beet water, lemon juice and pectin in a large pan. Bring to a rolling boil. Quickly add sugar and boil for 6 minutes.

Add soft drink mix, mix throughly. Pour into sterilized jelly jars. Fill to 1/2 inch of top. Use 2 part top, place lid on and screw

band tightly. Process in boiling water bath for 5 minutes.

Yield 4 8oz. jars

Allow the beet water to set and dip from the top. The grit will settle to the bottom. You can always strain the water to prevent

any grit from being in the water.

My Meat Ball Sauce

5 ounces grape jelly

3 ounces prepared yellow mustard

1/2 bottle barbecue sauce

Heat on low until ingredients melt, pour over meat balls. Serve warm in slow cooker or chafing dish.

You can use the grape beet jelly in this recipe.
