Corned Beef

4 pound beef brisket or roast

3 cloves garlic

1 tablespoon pickling spices

1 teaspoon saltpeter

1/2 cup salt

paprika (this is used to make the meat red, how much you use is

your choice,)

Place roast in glass container, add enough water to cover.

Add remaining ingredients to the water.

Cover and marinate in refrigerator for 10 days.

Rinse meat with cold water,

Place in roaster and cover with fresh water.

Simmer for 4 hours.

Paprika I added this by teaspoons and used about l 1/2 teaspoons.

The corned beef came out a nice color.
