Oatmeal Bread

1 cup boiling water

1 cup oatmeal, ground fine in blender or mill

1 package dry yeast

1/3 cup warm water'

1/4 cup sugar

1 tablespoon butter

1 teaspoon sea salt

1/4 cup warm water

1/2 cup whole wheat flour

2 1/2 - 3 cups unbleached bread flour

Combine ground oatmeal and water. Let stand until lukewarm.

Add yeast dissolved in 1/3 cup warm water, sugar, butter, salt,

1/4 cup water and flour.

Knead in a mixer about 6 minutes or 10 minutes by hand.

Let rise covered for about 1 hour in a greased bowl.

Shape into loaf, place in 9x5x3 greased loaf pan. Let rise 45 minutes.

Bake at 350 degrees for 50-55 minutes.

Cool before slicing.
