This is a All Grain Mini-Mash White Ale made from supermarket products. The batch is small, so it can easily be done on an electric stove and instead of a lauter tun you can use a colander. It doesn't have any hops on the bill, but you can add some during the boil if you wish (hop substitute: cream of tartar).
Ingredients:
* 5 cups of Bran Flakes Cereal
* 1/4 cup of Rolled Oats
* 1/4 cup of Wheatlets or Cream of Wheat
* 1 cup of Candi Sugar (see below)
* 1 tsp of Coriander (cracked)
* zest of 1/2 an Orange
* yeast (this is one you may not find, bakers yeast will work but won't taste that great, try making your own Homemade Yeast, or culture some from a bottle of beer)
* 1/8 cup of Dextrose or Sugar for batch priming
Procedure:
Add Bran Flakes and 4L of water to a large pot, get the temperature between 150F to 155F (stir often), remove from heat and let stand for 60 minutes (wrap pot with a towel to keep it warm). Next, sparge with 4L of water @ 180F, collecting at least 5L of wort. In a larger pot, boil uncovered for 75 minutes (adding sugar @ 30 minutes, coriander/rolled oats/wheatlets @ 50 minutes and peel @ 70 minutes), then fast cooled in bath of cold water for 15 to 20 minutes. Add cooled wort to a 1 Gallon (3.78L) Fermenter using a strainer. Add yeast, etc.
Candi Sugar Procedure:
Start this once your wort is boiling. Add 1 cup of table sugar, 1 tsp of lemon juice, and 1/4 cup of water to a Non-stick Frying Pan. Boil and stir often for 20 to 30 minutes. Remove from heat and slowly pour it into your boiling wort (the hot sugar can cause the wort to splash).
