Cheap "Belgian Wit" Ale (AKA. "Rickard's/Alexander Keith's/Blue Moon's" White Ale Clone)

My favorite

Recipe #1 (Cost: $15)

Makes 20 L at 5.5 - 6%.

Fermentation: up to 10 days.

Bottle for 7 days (4 weeks would be better).

Ingredients:

1 can of Pale Ale Malt Extract (Bru-Mix)

1/4 cup of Wheat Bran (Substitute: Bran Flakes Cereal)

1/4 cup of Wheatlets (Substitute: Cream of Wheat)

1/4 cup of Rolled Oats (Substitute: Oatmeal)

5 cups of Dextrose

2 cups of Brown Sugar

1 1/4 cups of White sugar

1 tbsp of Coriander (crushed)

1 tbsp of concentrated lemon juice

1 packet of Beer Yeast (usually included with malt)

In a large pot boil 5L of water, then remove from heat. Add all ingredients (except yeast and 1 1/4 cups sugar for priming) and stir. Then return pot to stove and boil for 15 minutes (watch and stir pot often, it can boil-over). Add mixture using a strainer or non-disposable coffee filter to fermenter. Now, rinse waste with water into fermenter until its 3/4 full. Add yeast and then airlock. The brew will not clear fully when it's finished fermenting (it is white beer after all), just look for a slow down in bubbling, waiting an extra day or two won't hurt to be sure its complete. Once its done, rack brew into bucket, add 1 1/4 cups of sugar and water to fill (20L), stir a little, then bottle.

Recipe #2 (Cost: $30)

Makes 20 L at 5.5 - 6%.

Fermentation: up to 10 days.

Bottle for 14 days (6 months would be better).

Ingredients:

1 can of Wheat Malt Extract (Example: Morgan's Golden Sheaf Wheat or Black Rock Whispering Wheat)

1/4 cup of Rolled Oats (Substitute: Oatmeal, low sodium)

1 kg of Liquid Dextrose (Example: Munton's Brewer's Syrup HMG)

200 g Beer kit primer pack with heading powder (Example: Munton's KreamyX Primer with Heading Powder)

1 tbsp of Coriander (crushed)

2 tbsp of Orange Zest (finely shredded orange peel)

1 packet of Yeast (usually included with malt)

In a large pot boil 4L of water. Add Oats, Dextrose, Coriander, and Zest. Stirring for 15 minutes. Then remove from heat, add malt and stir. Add mixture using a strainer to fermenter. Now, rinse waste with water into fermenter until its 3/4 full. Add yeast and then airlock. Best served cold in a large glass with a slice of orange.
