Made it again, very similar to the last batch, i.e. it ROCKS, even my non-beer drinking wife liked it. I tested it with only 10 days in the bottle, so the flavor still has some time to mature as well. The yeast in the Bru-Mix kit wasn't coopers this time, an all white packet (with only the expiry date), the stuff took off, it fermented in 4 days. Still has a little head, I used 1 1/2 cups of dextrose to prime, next time I will stick to 1 or 1 1/4 cups of white sugar.
With a Slice of Orange it comes pretty close to the real thing, well as close as possible going L' cheap 'O. Here is a Pic.
Second Week: As you see its lighter than the last white brew. Not sure why, the yeast was different so maybe the malt was too, and also it's hasn't aged as much yet. Lots of Carbonation.
Third Week: So far the color is about the same (maybe a little darker), has more head now. Some change in taste (more bitter, the orange seems to increase it even more).
Forth Week: Color is holding, taste great (not as bitter as last week, I like it more without the orange now), and just the right amount of carbonation.
Conclusion: This beer is best tasting during the Second week and after the Forth, however, the second week brew has more carbonation and more sweetness, so I would age for at least 4 weeks for the best results. One point I thought I'd pass along, the first few of these (after 10 days) really packed a punch, I had two and was well on my way. I think it was just the amount of carbonation and the fact they were so tasty (i.e. they didn't last long).
